MICHAEL PETICOLAS

michael@peticolasbrewing.com

Michael Peticolas is a fifth generation Texas trial attorney and owner/operator of Dallas’s Peticolas Brewing Company.

After practicing law for a decade, Michael Peticolas turned to his passion for craft beer.  In 2010, he enrolled in the ABG’s Intensive Brewing Science and Engineering program, wrote a business plan, and formed the Peticolas Brewing Company.  The following year, he built a brewery and on December 30, 2011, Michael brewed his first batch of beer, an Imperial Red Ale called Velvet Hammer.  During the first year of operations, Michael acted as the brewery’s sole brewer, cellarman, distributor, and brewery representative.  Volunteers pitched in from day one and several ultimately gained employment after proving themselves via the volunteer program.

In its first year of operations, Peticolas Brewing Company won numerous local and national awards, including the biggest award in the brewing industry, a gold medal at the Great American Beer Festival (GABF).  A GABF gold medal is an objective measure that a beer is a world class example of a particular style.  Peticolas Brewing’s Royal Scandal, an English pale ale, won the award after less than 2 months in the market.

In 2014, Texas craft brewers elected Michael to the board of directors for the Texas Craft Brewers Guild.  After serving for a year, the board elected Michael co-chair of the legislative committee, which seeks to expand the rights of Texas craft brewers via legislative measures.

Peticolas Brewing also sued the State of Texas in an effort to declare an anti-craft beer law unconstitutional.  Litigation is ongoing, but a favorable judgment will be a victory for all Texas craft brewers.  Peticolas’s legislative and judicial efforts, as well as the award winning beer, have established the brewery as a craft beer industry leader in Texas.

RICH FRANZEN

rich@peticolasbrewing.com

Rich (a “hat guy”) found his way down to Dallas from the beautiful rolling wooded hills of Decorah, Iowa via the Army after being stationed in Fort Sill, OK, and then Camp Stanley, South Korea, and then eventually completing a business degree at the University of Texas, Dallas (Go COMETS!  whoosh).
A decade of work for the US Bankruptcy Court in Dallas followed, along with a love of riding and working on bicycles and Ducati Monster motorcycles in his spare time.  That was also when his love of craft beer developed over many group ride meet ups at The Old Monk (and too many orders of frites with those delicious three sauces) and the occasional outings to the gorgeous Texas hill country.
His love for brewing then began first by himself at home, spending a Friday evening meticulously preparing supplies and equipment, and then brewing all day Saturday, listening to about eight hours of NPR on KERA (he says everyone reading this should support their local station..).  He then started attending brew days with clubs like North Texas Homebrewers Association, and The Dallas Homebrew Collective.  Who doesn’t love brewing and grilling in someone’s back yard?  If you’ve never had the pleasure, do yourself a favor and try it out.
He finally made his way by the Peticolas Brewery in early 2013, after enjoying the Velvet Hammer many times with friends, and repeatedly hearing from home brewers that they were brewing tremendous beers across the board, and were a great group of people to know.  He started volunteering at first by pouring beers for tours, and then taking days off of work to come in and work in production (so much scrubbing…).
When not brewing, kegging, replacing pumps or motors, swapping out steam piping (and so much cursing), scrubbing, spraying weeds, and the occasional plumbing project, he enjoys getting crushed in ping pong by Michael and Burn Leg in the taproom, cycling around White Rock lake, running and biking on DORBA mountain bike trails, donating blood, watching The West Wing series for the 25th 26th time, playing Fallout 4 (why does he keep playing past level 70??), and catching shows at small venues (or Ben Folds at massive ones).  Also he really enjoys making smoothies and juicing.  #veggiesareawesome, Chad.
Finally, he says the answers to the two most common questions he gets are: I’ve been growing it since January 2016, and yes, you can touch it, if my girlfriend says it’s okay.

MATT WHISTLER

Sometimes Whistler. This Ohio and Indiana native discovered his love of the craft beer culture while traveling through Belgium in 2003. Matt holds a MA in Art History from FSU and taught at a community college in Tallahassee for four years. He started working in production at Peticolas Brewery as a volunteer and got lucky he had a last name that sounded like a nickname. A first but probably not the last. Matt can’t grow a beard but he still landed a full time position at Peticolas after moving to Dallas.
